Edouard de Broglie wil be opening "Dans Le Noir” (In The Dark) next month. De Broglie believes a dark room allows you to savor the food with only your taste buds. Some other chef's, who consider the eyes part of the palate, scoff at the idea.
The menu selection is handled in a normally lit bar. Due to the adventurous theme, 80% at the Paris version go for the surprise menu.
